The custom cut experience is exciting!  If you are the experienced chef, you may already know exactly how you want it custom cut and prepared.  If not, we are happy to walk you through the process and help with the fun choices.  Besides the cost savings, picking out the thickness of chops and the flavors of bacon or sausage (there are a lot) is the best part.

There are cured meat options that include: 

Bacon, Jowl Bacon, Hams, Hamlets, Sausage, and Shanks

There is approximately 85-90 lbs of meat in a 1/2 hog. Harvest and delivery to the shop are included. Depending on custom cut choices, there are hams or hamlets or both. Spare Ribs (1 racks), Tenderloins (1), Smoked shanks (1), Chops (15-20lbs), Bacon (10-15lbs), Shoulder Roasts (4) depending on size, and other cuts.
