  • The custom cut experience is exciting!  If you are the experienced chef, you may already know exactly how you want it custom cut and prepared.  If not, we are happy to walk you through the process and help with the fun choices.  Besides the cost savings, picking out the thickness of chops and the flavors of bacon or sausage (there are a lot) is the best part.  

    Except eating it, that is definitely the best part!

    There are cured meat options that include: 

    Bacon, Jowl Bacon, Hams, Hamlets, Sausage, and Shanks

  • There is approximately 180-200 lbs of meat in a whole hog.  The cost is $6/lb of hanging meat.  A deposit of $600 is required and the remaining is collected upon delivery to the butcher shop.  Harvest and delivery to the shop are included.   Depending on custom cut choices, there are hams or hamlets or both.  Spare Ribs (2 racks), Tenderloins (2), Smoked shanks (2),  Chops (35-40lbs), Bacon (15-20lbs), Shoulder Roasts (4-8) depending on size, and other cuts. 

    The cut and wrap fee is paid directly to the butcher.  If you have a specific butcher in mind, let us know.  Otherwise we have two choices available.  Please call to discuss.  The meat is picked up at the butcher shop and all fees are paid to the butcher directly.  

    You will need approximately 8 cubic feet of freezer space for a whole and 4 for a 1/2.
